SWEDISH MEATBALLS ใฐ๏ธ
This definitely has to be one of the most comforting meals โบ๏ธ Every time I have it, it gives me nostalgic feelings of putzing around IKEA on Sunday afternoons โ๏ธ
Ingredients:
Meatballs -
1 lb of ground pork
1 lb of ground beef
1/2 onion, grated
1/3 cup Breadcrumbs (or enough to soak up the grated onion)
Salt and Pepper (if you have white pepper, use that)
1/2 tsp. Grated nutmeg
1 egg
Sauce and Cooking -
Neutral Cooking Oil
3 tbsp. Butter
3 tbsp. Flour
2 cups beef stock
1/4 cup of heavy cream
Salt and Pepper to taste
Recipe:
1. Grate onion and add to a large mixing bowl.
2. Add breadcrumbs to the bowl and mix so that the breadcrumbs soak up the onion juices.
3. Add ground beef, ground pork, salt, pepper, nutmeg, and egg to the bowl. Mix thoroughly to combine.
4. Once combined, roll out mini meatballs and set them aside for cooking.
5. In a large skillet, heat up olive oil and a smidge of butter.
6. Once the pan is hot, cook the meatballs. Make sure that they are brown all over.
7. Once browned, remove from pan and set aside.
8. Add the remaining butter to the pan and slowly whisk in the flour until thick.
9. Add stock and continue to whisk.
10. Let the mixture come to a simmer and add the meatballs and juices back into the pan to finish cooking (about 10 mins)
11. After that, add in the cream, mix, and let simmer for an additional 2 mins.
12. Serve with lingonberry jam and mashed potatoes and youโre set.
