CARNITAS INSPIRED TACOS 〰️
Carnitas-inspired tacos 🌮 these things were rippin’ 🚀 a little radish, chopped onion, cilantro, and guac, and you’re good to go.
Ingredients:
3-4 lbs Pork Shoulder
Juice of 1 Orange
1 can Chipotle Peppers
1 can Hatch Green Chiles
2 cups Stock
1 cup water
1/2 Red Onion
4 Garlic Cloves
1 packet Sazon
1 Bouillon Cube
Salt Pepper
2 tbsp. Oregano
1 tbsp. Cumin
Toppings - chopped onion, cilantro, radish, guac
Recipe:
1. Season pork shoulder all over with oregano, cumin, salt, and pepper. Rub all over with oil. Set aside when done.
2. In a hot cast iron pan, heat up 2 tbsp. oil. Sear the meat on all sides until a nice crust forms on the meat.
3. Once all sides have been seared, add onions and garlic to the pan and sauté.
4. Once translucent, add the chicken stock to the cast iron and simmer.
5. Add juice from an orange, hatch green chiles, chipotle peppers, and Sazon to the pan. Mix and continue to simmer.
6. Baste the meat in the liquid several times and turn the heat off after about 5 minutes.
7. Transfer meat and liquid into a pressure cooker and cook on high for 1 hour. If using a Dutch oven, cook at 250F for about 4 hours.
8. Once the meat is done cooking, separate the meat from the braising liquid and let it cool. Once the braising liquid has cooled, skim the fat off the top.
9. Once cooled, shred the meat. Reserve the braising liquid for later.
10. Crisp the shredded meat in hot cast iron with some braising liquid.
11. Brown the tortillas in a cast iron pan with some braising liquid.
12. Serve with your choice of toppings and enjoy.
